    Garlic Mashed Potatoes

    Garlic mashed potatoes go great with anything “saucy”, like meatballs in tomato sauce, and beef stew, or with grilled fish fillets. So there are two versions: dairy and non-dairy (Parve), so you can each make your preferred version. Ingredients 5-6 cooking potatoes, peeled and cubed 4-5 garlic cloves, peeled salt (optional) freshly-ground black pepper For the Dairy Version: 50 gr. butter ¼ cup milk For the Non-Dairy (Parve) Version: 50 gr. margarine ¼ cup of the cooking water Preparation Put the potatoes and garlic cloves in a sauce pan, cover with water (~4cm/2″ above potatoes).     Basic Vinaigrette Dressing

    Tip: The amount of dressing is far greater than one salad requires, so keep the rest in a closed jar in the fridge, and shake well whenever you want to use. The vinegar and lemon juice keep it fresh and the taste only intensifies with time. ½ Extra-virgin olive oil ¼ cup white wine vinegar (regular will do just fine if you’re out) 2 cloves garlic, crushed 1 tsp Dijon mustard ½ tsp salt ¼ tsp black pepper 2 tbsp honey Juice from ½ a lemon To prepare, simply put all ingredients in a jar, close the lid and shake well.     This truly is a cheat salad… 2 minutes to prepare the salad, 5 minutes for the dressing – no one will ever know! Ingredients Fresh Iceberg lettuce cut into bite-size chunks Your favorite additions – I like pears and cranberries, or sun-dried figs and blue cheese.. handful of each. Mix in a bowl.
