    Ingredients 2 eggs 20 grams (2 Tbsp.) sugar ½ tsp. salt 2 Tbsp. vegetable oil 160 ml. (⅔ cup) thick goats-milk yogurt or sour cream (For a non-dairy version: Tofutui dairy-free sour cream) 140 gr.     Melt-in-your-Mouth Quick Cheesecake

    This is the only cheesecake my son likes. Ingredients 750 gr. 5% soft goats-milk cheese (or plain soft cheese) – room temperature ¼ cup of sugar 3 eggs 1 packet (80 gr.) instant vanilla pudding 1 Tbsp. corn starch 1 Tbsp. Tami Gluten-free flour (or a good all-purpose GF flour), or plain flour (if you do not need a GF version) Preparation Preheat oven to 150C/300F.     Meringue Ingredients 200 gr. egg yolks 400 gr. sugar Meringue Preparation Fill a pot with about 2cm/1inch water and bring to a boil. Place a heat-proof bowl over the pot (I use the metal mixer bowl), so that the bowl’s edges rest on the pot, and its bottom is not(!) touching the water (this technique is known as Bain Marie). Place the egg whites and sugar in the bowl, and whisk using a beater until the sugar melts completely (take a drop between two fingers and make sure it doesn’t feel grainy).
