Mom’s ‘Orange’ Soup

Ingredients

1 large onion, cut into quarters
3-4 garlic cloves, minced
2 sweet potatoes, peeled and cut into medium cubes
1 large carrot, peeled and cut into large cubes
25 gr. butter
Water to cover
1 Tbsp. coarse salt
½ tsp. turmeric powder
1 tsp. chicken flavored broth powder (optional)

Preparation

Place all ingredients in a pot.
Add water to cover the vegetables (no higher).
Bring to the boil over a high heat.
Reduce to low heat and cook for approximately 1 hour until vegetables are very soft.
Remove from heat and use stick blender to blend until smooth (if you do not have a stick blender, you can pour everything into a normal blender).
Adjust seasoning to taste (salt), if necessary.

Tips

  • If you prefer the soup less thick, add a little water and mix until you reach the desired consistency.
  • I recommend serving with croutons (if you don’t have any, you can toast some bread and cut into cubes).
