    Soy, Garlic and Ginger Salmon Cubes

    Yep, this is another “cheat” recipe – 5 minutes work, 10 minutes in the oven and DONE… Even though I categorized this as a starter, you can definitely serve it as an entree with rice or Garlic mashed potatoes as a side. Ingredients 500 gr. (~1 pound) Salmon fillet, cut into 2cm/1″ cubes 2-3 garlic cloves, minced 1 tsp ground ginger root (or 2 cubes frozen ginger, if you’re lazy like me) 2 tbsp soy sauce 1 tbsp dark brown sugar (optional) wooden skewers Preparation Preheat your oven to 220C/390F.     5-Minute Lettuce Salad

    This truly is a cheat salad… 2 minutes to prepare the salad, 5 minutes for the dressing – no one will ever know! Ingredients Fresh Iceberg lettuce cut into bite-size chunks Your favorite additions – I like pears and cranberries, or sun-dried figs and blue cheese.. handful of each. Mix in a bowl. Five minutes before serving pour your preferred dressing over it and toss: Basic vinaigrette dressing Citrus vinaigrette dressing
