    Nectarine Chicken

    Ingredients 8 skinless (and possibly boneless) chicken thighs or legs 2 large onions, chopped 3 carrots, peeled and cut into circles 1 medium-sized yam, cut into large cubes (4-5cm/1½-2″) 4 nectarines, quartered ¾ cup Teriyaki sauce 1 cup water 2 tbsp. brown sugar salt and pepper for seasoning 2 generous handfuls chopped coriander Preparation In a pot, fry the onions in oil until golden-brown. Add the carrots and yam, and lightly sauté. Add the chicken and brown on all sides. Add the nectarines and stir briefly. Add the water, Teriyaki sauce and sugar.     Swiss Meringue and Its Many Wonders

    Anyone who knows me, knows I have a too-sweet tooth, and also hate wasting good food… My start with meringue came when I had a few spare egg-whites after making my son some Crème Pâtissière, and the rest is history. There are three types of meringue: French, Italian, and my personal favorite – Swiss. Basically, each type of meringue has its own uses, but just between us – I use Swiss meringue for EVERYTHING. The main principle is a ratio of 2:1 between the sugar and egg whites, so for example for 200 gr. of egg whites use 400 gr. of sugar (that’s about 5 large egg whites and 2…

    Crembo Base (soft cookies)

    Ingredients 100 gr. sugar 100 gr. soft butter 200 gr. Tami GF flour, or regular flour 2-3 egg yolks Preparation Mix all ingredients other than yolks into soft crumbs. Add 2 yolks and knead into a soft, smooth dough – if necessary, add the third yolk (or part of it). Cover in plastic wrap and refrigerate for ½ an hour. Preheat your oven to 160C/320F. Over a baking sheet, roll the dough to a thin layer. Cut out circles in the desired size (I cut into 1½-2 inches). Transfer cookies onto a tin lines with baking paper. Bake for 8-10 minutes until golden-brown. Let cool completely before removing from tin.

    Fruity Triple-Almond Tart

    Almond Crust 250 gr. (1 ¾ cups) Tami (GF), or another all-purpose GF flour, or plain flour (if you don’t follow a GF diet) 100 gr. (1 cup) ground almonds 30 gr. (¼ cup) caster sugar 150 gr. cold butter, cubed 1 egg Knead everything except the egg into crumbs (in a bowl or your food processor) Add the egg and knead only until you have a solid dough.     Home-made Granola

    As simple as it is delicious. Great as a snack, great crumbled over yogurt – simply addictive! You may, of course, use regular rolled oats if you don’t follow a gluten free diet. Ingredients 500 gr. gluten-free rolled oats (not instant) A combination that you like of dried fruit and nuts (my favorite combinations are almonds, cranberries and pecans, or almonds, sunflower seeds, sesame, cranberries, pistachios and prunes): 250 gr. dried fruit mixture (dried apricot\prunes\raisins\cranberries\dates\dried apples, etc.) 250 gr. un-roasted nuts/seeds/sesame mixture (almonds\pecans\walnuts\hazelnut\cashew\pistachio\pumpkin seeds\sunflower seeds, etc.) ¾ cup honey/date honey (silan)/maple (I prefer honey) ½ cup olive oil pinch of Kosher salt Preparation Preheat oven to 150C/300F.
